Pumpkin Seed Milk Recipe

My brother in-law shared with my husband and I all the great benefits of pumpkin seeds and how he and his family have also made milk with the seeds. I thought I would give it a try and see if my son would like it. We do not drink any animal milk, so we appreciate the alternatives to milk such as almond milk, coconut milk, and now pumpkin milk. It's really delicious, easy to make, and my son really likes it!

Ingredients & Instructions:

1 cup of raw pumpkin seeds (pepitas)

2-3 cups of water

a dash of cinnamon

a splash of vanilla

2 tablespoons of agave (or a couple of dates)

Blend and strain. Store in the refrigerator in an air tight sealed container such as a mason jar. If you plan to drink it right away you can store it in a pitcher, allow it to chill and enjoy. Please remember that it is free of preservatives, unlike the milk we purchase from the store, so be sure to use it within 2-3 days. I added more water at the end because it was still a little thicker than I wanted, so you can modify the recipe as you see fit for you and your family. You can add as much sweetener and/or cinnamon to your liking. You can also use dates to sweeten the milk. Drink a glass of it, use it in your cereal, make a smoothie, have some cookies with it! It's fresh and good! Enjoy!

So what's the big deal with pumpkin seeds and/or pumpkin milk? Well here are a few of the health benefits of pepitas: High in fiber, protein, iron, vitamin E, and omega 3-fatty acids, a good source of vitamin B-complex, zinc, magnesium, potassium, and calcium. These are just to name a few. Based on the research that we have done for our family there are additional health benefits to pumpkin seeds.
