Mushroom "Bacon"

I love to cook and I love to get creative in the kitchen.  My husband and I are not vegan, however there are a lot of animal products that we do not eat. When I'm in a creative mood in the kitchen my entire family benefits with the results being a tasty meal. This week I decided to make mushroom "bacon." It's easy and delicious. Give it a try and let me know what you think!!

Ingredients:

2 large portobello mushrooms

1/2 a teaspoon of applewood liquid smoke

Sea salt to taste

Black pepper to taste

Smoked paprika to taste

1 Tablespoon of maple syrup

1 Tablespoon of olive oil

Preparation/Method:

Preheat oven to 350 degrees. Lightly oil cookie sheet with the tablespoon of olive oil. Wash then cut the mushrooms into thin slices. In a large bowl combine sliced mushrooms, liquid smoke, sea salt, black pepper, smoked paprika, and maple syrup. Ensure that all mushroom slices are equally coverd with the above ingredients. Place sliced mushrooms on the lightly oiled cookie sheet and bake until browned and crispy (about 20 minutes). Turn your sliced mushrooms at least once halfway thru. Every oven cooks differently so be sure to check them periodically to ensure they do not burn.

We used our freshly made mushroom "bacon" for grilled veggie paninis.  The taste and the texture of the mushrooms were a perfect addition to our panini. This yummy "bacon" also rendered a delicious smell throughout my home as it cooked.  The smell definitely heightened our anticipation for dinner! I can't wait to try the mushroom "bacon" in soups, salads, and even tofu scramble. Enjoy!
